Eaton DC’s featured morning-through-late night restaurant. Helmed by Chef Tim Ma, American Son epitomizes what modern-day American cuisine genuinely is: a melting pot of immigrant culture. Set in a greenery-filled artistic environment, American Son presents simple yet thoughtful presentations of American comfort food, using ingredients and techniques influenced by Ma’s own immigrant background as a second generation American. The restaurant will have a heightened focus on vegetable-forward cuisine and all things local, with seasonal produce sourced from the hotel’s rooftop garden as well as from long-standing purveyors, including zero-waste farm, green circle chicken, and the certified organic and chemical-free Lancaster Farms. American Son will also offer a special late night menu, creating a gritty, familiar “peach pit”-inspired after-hours hangout in the Downtown D.C. neighborhood.
