Led by head chef Reid Shilling, Shilling Canning Company is a family-owned restaurant located in Navy Yard inspired by the flavors of the Chesapeake region. Named for the Shilling family’s former canning business, the restaurant offers regularly rotating pre-fixe and a la carte menus guided by the seasons to spotlight peak produce and local producers.
Defined by a culinary ethos of intentionality, nearly everything at Shilling is produced in-house, with fine herbs and garnishes regularly sourced from the restaurant’s expansive outdoor garden and excess produce purposefully preserved for future use by the kitchen. Menu highlights range from Amish Fried Chicken to Deviled Eggs, Crab Cakes and Chesapeake Bay Black Bass.
